Celebrating more than a decade at this time can be quite the achievement for any small business, especially with the trials and tribulations that an owner would have to undergo if opening in the mid 2010s and making it to today. For Andy Cook, the founder of Swiftwater Brewing in Rochester, New York, it meant opening during a craft beer boom and followed by a worldwide pandemic and then shifting consumer buying habits and tastes.
