Fulton Brewing, home to Minneapolis’s first taproom, is raising the bar once again–this time in the kitchen. After years of food trucks, a retro Airstream and a pandemic–born takeout menu, Fulton has unveiled a fully expanded kitchen designed to match the energy of its beer.
The new menu features elevated-but-approachable comfort foods designed to pair perfectly with a pint. Smash burgers, crispy chicken wings, and handheld favorites headline the fall lineup, joined by playful riffs on neighborhood classics and bar staples.
“As Minneapolis’s first taproom, Fulton has always been where people come together over great beer,” said Jill Drum, Fulton’s director of hospitality. “Now the food will make the experience even better.”
Head Chef Brandon Ricigliano, who leads Fulton’s kitchen team, added, “Our goal was to create a menu that’s craveable, shareable, and perfectly balanced with Fulton’s beers. It’s the kind of food you come back for.”
Since opening the first taproom in Minneapolis in 2012, Fulton’s food story has evolved alongside its beer. What began with a rotation of fan-favorite food trucks grew into a 1968 Airstream-turned-kitchen in 2017. In 2020, Fulton leaned into patio service and takeout to navigate the pandemic. Now, in 2025, the brewery has completed its biggest leap yet: a full kitchen build-out with flat tops, fryers, and the culinary flexibility to serve up an expanded menu for every occasion.
