Sealed Envelope (collaboration with Modern Times Beer)
Nearly three years ago, the WeldWerks team sat down with Modern Times and developed a special recipe that blended Modern Times’ barleywine grist bill with WeldWerks’ Medianoche grist bill, 30/70. The result? One of the most unique imperial stouts that WeldWerks has ever barrel-aged. To keep the creativity rolling, the brewers then exchanged three different adjuncts in a sealed envelope, with the promise not to open until the beer was ready—32 months in six-year-old Fitzgerald bourbon barrels to be exact. Upon opening the envelope, WeldWerks was thrilled to see that their friends selected banana, pecan, and cinnamon adjuncts, which WeldWerks delivered by resting the aged liquid on wild Thai bananas, toasted pecans, and Vietnamese cinnamon. $5 from every bottle sold will go to the Global Empowerment Mission to raise funds to assist with needs on the ground following the Maui fire disaster.

Winter Starry Noche:
Winter Starry Noche celebrates the shortest days of the year, when the moonlight bounces off snow-covered landscapes on a chilly winter’s eve and reminds us how lucky we are to be nestled near a fireplace, sipping on something that warms the soul. This barrel-aged delight began as a hand-picked blend of Medianoche aged for 23-34 months in a variety of freshly-emptied bourbon barrels, including six-year Old Fitzgerald Bourbon, 10-year Eagle Rare Bourbon, and 12-year Weller Bourbon. This special blend was conditioned with more than three pounds per gallon of toasted coconut flakes & raw coconut chips, and finished with toasted pistachios.
