3 Sheeps Brewing will release Two Tree, a 3% ABV hazy IPA, Nov. 7, targeting drinkers seeking lower-alcohol options without sacrificing flavor or body.
The beer was developed in response to growing interest in lower-alcohol beverages. According to the International Wine and Spirits Record, U.S. low-alcohol beverage volumes grew at a 7% compound annual rate from 2019 through 2024.
Creating Two Tree required the brewery to use new brewing techniques to reduce alcohol content while maintaining the hop flavor, haze and soft mouthfeel associated with hazy IPAs.
“On paper, the goal was pretty simple: lower the ABV and keep all the good stuff,” said Grant Pauly, founder and Brewmaster of 3 Sheeps Brewing. “Actually brewing it took us into some new territory. We leaned on brewing science that was new to us and approached the beer differently from the ground up.”
Around Wisconsin, “two or three” has a funny way of becoming “a couple two t’ree”. That familiar bit of Wisconsin colloquialism inspired the name.
Two Tree is hopped with Cascade, Ekuanot and Trident. It will be available in 12-ounce cans and on draft at bars, restaurants, grocery stores and liquor stores throughout Wisconsin, northern Illinois and the Chicago area.
The beer also will be available at the brewery’s taproom at 1837 North Ave. in Sheboygan, Wisconsin.
Consumers can find retailers through the brewery’s online tap finder.
