Grilled Oysters with Samuel Adams Boston Lager-Japanese Barbecue Sauce

Ingredients

    • Serves 4 to 6
    • 2 cups soy sauce
    • 1 cup sugar
    • 8 ounces (1 cup) Samuel Adams Boston Lager
    • 2 ounces (1/4 cup) sake
    • ¼ cups fresh orange juice
    • 24 fresh Bluepoint or similar oysters, still on the bottom shell
    • 6 tablespoons unsalted butter
    • 1 bunch (5 to 6) scallions, light green parts only, thinly sliced
    • 2 lemons, cut into wedges

 

Directions

Yield: Serves 4 to 6

  1. In a medium-sized saucepan, bring the soy sauce, sugar, beer, sake, and orange juice to a boil over medium-high heat. Reduce the heat slightly and simmer briskly for 10 to 15 minutes, or until reduced to a syrupy consistency and measures about 1/2 cup.
  2. Shuck the oysters to serve on the half shell.
  3. Prepare a charcoal, gas, or stovetop grill so that it’s medium-hot or heat the broiler.
  4. Put the oysters on the grill or under the broiler, drizzle ½ teaspoon of the reduced soy glaze over the oyster meat and top with a pat of butter. Grill for about 5 minutes or until hot and bubbling.
  5. Top each oyster with scallions and serve with lemon wedges.
